The Little Rawdorable Cupcake Book That Could – and does!

My cyber-space, raw food buddie, Shannonmarie, aka Rawdorable, has recently published a wonderful, delicious, and fun recipe e-book, all about making raw food cupcakes, “The Little Rawdorable Cupcake Book That Could”. I consider Shannonmarie the Betty “Rawker” of the raw food world! Her recipes are fantastic, and her food presentation is right on! If you miss Hostess cupcakes, she’s got you covered. If you want birthday cupcakes without the “junk”, she’s got you covered! If you want cupcakes for dinner – Shannonmarie has you covered! It’s amazing what she can do with the raw food cupcakes!!!

Lately Shannonmarie has been working on a special project, My Ellen Quest for Raw Cupcake Domination” to introduce Ellen to a raw food diet in a very creative way. Since Ellen DeGeneres has her own “world domination” mission, and is a vegan, loves cake, but wants to eliminate all refined sugars – she is the perfect candidate for a raw food cupcake. Well, I myself, am attempting to participate in her project. I’m a little behind, but still making the effort. I started out by making her Creme-filled Lemony Cupcake from her e-book, but did not have all the ingredients – So I improvised, and made a different topping. Not too bad, but I wish I had the ingredients.

My second attempt was much better. This time I made her Cocoa Avocado Cupcakes. I had all the ingredients – and it made a difference. These little gems were de-li-cious!!! There’s only one left, and I still need to take the Ellen cut-out to make a photo with the cupcake and Ellen to send in to Shannonmarie. Well, that’s okay, I’ll just make more. There are still over 20 more cupcake recipes to make!

Sweetly Raw’s Moon Pie Challenge!

Well, I don’t have a recipe to share tonight. However, I do have a recipe book, and recipe challenge to tell you about. Heather Pace of Sweetly Raw created a fantastic recipe for raw moon pies, and published a mini e-book on how to make them. She is also having a great and fun recipe challenge – the Sweetly Raw’s Moon Pie Challenge! There’s still time to enter – winners will be announced Friday the 16th! So check it out!!!

Pecan Brownie with Chocolate Coconut Ice Cream, and Chocolate Sauce

I’ve been reading a lot of raw and vegan blogs lately and really enjoying all the wonderful recipes and stories that other raw foodies have to share. I recently came across this recipe for pecan brownies from A Bitt of Raw blog that is simple and super delicious. I topped it with a scoop of my home made chocolate coconut milk ice cream, and easy chocolate sauce. Here’s the recipe for the ice cream and sauce, and how I put the pieces altogether.

Chocolate Coconut Ice Cream
Ingredients:
3-4 Young Thai coconuts
1 cup soaked cashews
1 cup coconut cream
1/4-1/2 cup raw cacao powder
1/2 T vanilla extract (non alcoholic)
1/2 cup to 2/3 cup agave nectar or organic maple syrup Grade B (or 1/2 and 1/2)
pinch of pink Himalayan salt
1 T coconut oil
few drops chocolate flavored SweetLeaf liquid stevia

Preparation:
Combine all ingredients in a high speed blender and mix until super smooth, thick and creamy. Pour into containers and freeze – or place in ice cream maker and follow directions on machine. I don’t use an ice cream maker personally.

Sauce.
Ingredients:
1/4 cup raw cacao powder
1/4 cup agave nectar or maple syrup Grade B (or mixed)
1/2 – 1 T hemp oil or extra virgin olive oil
few drops of chocolate flavored SweetLeaf liquid stevia

Preparation:
Combine all ingredients in a bowl and mix well.

To serve:
Place pecan brownie on plate. Place a big scoop of the chocolate coconut ice cream on top, and drizzle the chocolate sauce. So delish! 🙂

Andrea Primm’s Raw Vanilla Cinnamon Rolls

Hello everyone, hope life is treating you well! Sorry I haven’t posted any new recipes lately, I’ve been eagerly working on some other projects. I do plan to create something new and delicious this weekend, so look for new posts next week.
