Tropical Orange Creamsicle Smoothie

Amazing Grass came out with a new flavor of greens, Orange Dreamsicle Green SuperFood. I really wanted to try it, but I didn’t think it would go well with my usual morning fruit smoothies, so I came up with this little recipe and it was a winner!

Amazing Grass Green SuperFood
is an excellent product! The products are made from mostly organic greens, and contain no fillers.  Amazing Grass Green SuperFood is a non-dairy, completely vegan product, providing the most nutrient dense combination of fruits, vegetables, and greens, needed to energize and nourish the body. Amazing Grass comes in a variety of flavors, and in different serving size containers. I usually purchase the original greens in the jar size, while purchasing the other flavors as single-serving packets. I highly recommend this product for the price, flavor, and effectiveness. Tropical Orange Creamsicle Smoothie.

1 packet Orange Dreamsicle Green SuperFood
1 tsp lecithin
1 tsp organic, non-alcoholic vanilla extract
1 T maca powder
2 T lucuma powder
1 T Coconut Secrets Coconut Flour
1 tsp bee pollen
4-6 drops Vanilla Creme flavored SweetLeaf Liquid Stevia (you can use Valencia Orange as well, or combine the two flavors)
1 T raw coconut butter
drizzle sweetener sap (agave, raw honey, or Coconut Secrets Coconut Nectar)
1/4 cup organic dried shredded coconut
2 T vanilla hemp protein
1-2 T raw cacao nibs (optional)
3-4 oranges juiced (use more or less depending upon taste)
4-5 bananas (medium-sized)
1/4 cup pineapple chunks (freeze before use)
1/4 cup mango chunks (freeze before use)
4-6 ice cubes
fresh coconut water to cover

Combine all ingredients in a high-speed blender, and mix until super smooth and creamy. Yummo!


Vegan Wraps and Sandwiches (Transitional Foods)

The past few months I have been eating more heated and cooked vegan/vegetarian/whole foods than usual. Perhaps it’s due to the much colder weather, and the availability of fresh foods (or lack of), and the holidays, or just the need to eat more comfort foods due to the enormous amount of stress in my personal life these days. Within that I have made many great “transitional” dishes, as well as found some new “transitional” products.

One of my favorite things to do lately is to place warmed foods on top of fresh, delicious, nutritious greens. I’ve been enjoying a lot of collard green wraps, and have been enjoying the occasional sandwich on Ezekiel raisin bread, and gluten free, brown rice tortillas. But my favorite will always be the collard green wrap!

Around the holidays I discovered a great vegan product at Whole Foods, Garden Protein International (GPI), otherwise known as “Gardein“. Gardein carries a variety of delicious frozen meatless foods, such as Sweet and Tangy Barbecue Wings, Mandarin Orange Crispy Chick’n, Chipotle Lime Crispy Fingers, Classic Style Buffalo Wings, Home Stlye Beefless Tips, Lightly Seasoned Chick’n Scallopini, and my favorite Seven Grain Crispy Tenders.

Gardein contains no dairy, no eggs, no trans fat, and is a great source of protein, and you can eat it hot or cold. The main ingredients are water, soy protein, grains (such as quinoa, amaranth, and millet) as well as other flavorings and seasonings. It’s a great meal maker!

Gardein also makes a variety of fresh meatless meals, and makes these items for food service and for restaurants. It’s a fabulous product!

So here are some very simple vegan meals that are great for those transitioning to a raw food lifestyle, or for those who just want to eat a healthy, yummy, vegan or vegetarian meal.

The Vegan Sandwich.
2 pieces Seven Grain Crispy Tenders
2 slices Ezekiel raisin bread
1-2 T vegan mayo or cashew mayo
1 slice vegan cheese, or raw nut cheese
drizzles of prepared mustard
lots and lots of fresh leafy greens, including mache (lamb’s quarter), arugula, a mix of herb lettuces, and baby lettuces
1 slice tomato
sprouts or micro herbs (optional)

Spread mayo with mustard on slices of bread. Place 1 slice of cheese on 1 slice of the bread. Heat the tenders and place on cheese. Pile lots and lots and lots of greens on top of the tenders. Add slice of tomato and top with sprouts or micro greens. Place other sandwich slice on top and cut in half. This makes for a very thick and delicious, fresh, and nutrient-rich sandwich.

Instead of using bread, use collard greens and create wraps. Add slices of avocado, or pieces of dulse and cucumber. Whatever you feel like munching on that’s fresh and living. It’s all good!

Spicy Barbecue Wraps.
3 pieces prepared Gardein Classic Style Buffalo Wings
1 gluten free, dairy free tortilla (I prefer the brown rice type)
1-2 T vegan mayo or cashew mayo
1-2 T crumbled raw goat’s cheese (optional)
lots and lots and lots of fresh, spicy arugula
handful fresh mache (lamb’s quarter)

Spread mayo on tortilla. Add crumbled raw goat’s cheese (if desired). Place prepared wings on top of cheese. Add the fresh mache, and then pile lots and lots and lots of fresh, spicy arugula on top (make it fat). Roll up the tortilla the same way you would as a burrito or fajita – whichever way is easiest to accommodate the tortilla (some break apart easily). Enjoy!

The best raw truffles ever – Blackbird Naturals!

Blackbird Naturals Cacao Fudge Truffles – the best raw truffles ever! The first time I ever heard about these incredible truffles was from a fellow blogger and rawfoodist, Debbie Young of Debbie Does Raw who posted it on her blogspot back in April of this year. I was also pleasantly surprised and fascinated, when I found out that these delicious raw confections were an original product created by Raw Model’s Anthony Anderson, in partnership with the beautiful and adorable, environmentally conscious Alexandra Maw, and her wonderful mom, Andrea. It’s probably been just a couple of months, when I finally discovered these raw chocolate jewels at Whole Foods in Chandler, AZ. I was so excited! Would you believe the first package I purchased didn’t even make it home? That’s right, I couldn’t wait, so I ate just one when I got into my car to leave the store. Well, the experience was unforgettable, that I couldn’t contain myself. I ended up eating the whole package before making it home! So, I purchased another package during the week – which ended up in my tummy within two days! These truffles are crazy good!

I know this sounds over-the-top for a review, but seriously, all that I’ve talked to who have had the chance to taste these truffles agree – “it’s addicting!”

What made my experience and love for these truffles grow even stronger, was when I had the great opportunity of meeting the Blackbird Naturals‘ family in person. I first met Alexandra at Whole Foods one Saturday afternoon as she was offering a demo of the truffles. I recognized her immediately and introduced myself. Alexandra is even more adorable and sweet as can be in person! We briefly chatted, and she let me know when they would be back at Whole Foods again to demo. I returned that next time and finally got to meet Anthony – and just like Alexandra, Anthony is even more charming in person too! I love these two – they are just great!

Another fine and wonderful thing that the Blackbird Naturals‘ family is doing, is speaking to schools, and at Whole Foods about backyard gardening, superfoods, a cacao superfood smoothie demo, and about all things being green. They are great presenters, and truly genuine in their passion. That’s probably why the truffles are so exceptionally good – because of the love and passion that went into making these handmade chocolate rawsome goodies!!!

Chocolate Oat Cookies with Coconut Bliss Ice Cream

Recently I was asked to make some raw cookies for a baptismal party. So, I decided to come up with something simple and yummy – these delicious raw chocolate oat cookies. They were an absolute hit! One of the secrets to these yummy cookies was the raw coconut flour I used.

This is a newly discovered product for me produced by Coconut Secret. This flour is amazing! You can use it in a raw dish, as well as a cooked dish. My family was so bummed, since I didn’t make any of these cookies for us. That’s when I decided to make them again, but turn them into something even more special – ice cream sandwich cookies! Since I just discovered another incredible vegan product, Coconut Bliss ice cream, I thought it would be the perfect combination – and it was!

Coconut Bliss ice cream is soy free, gluten free, dairy free, and 100% organic. There are a variety of flavors to choose from, all made from natural, unprocessed ingredients. Now for the recipe:

Chocolate Oat Cookies.
1 cup almonds (ground to a fine powder)
1 cup coconut flour
1 cup raw oats
1/2 cup raw date palm sugar
1 cup raw cacao powder
2 tsp ground cinnamon
1 tsp bee pollen
1 cup pitted Medjool dates
1/2 cup dried goji berries
1/4 cup raw cacao nibs
1/3 cup raw agave nectar
1/2 cup purified water

1/2 cup carob chips
1/4 – 1/3 cup dried currants

Combine all dry ingredients, exclude dates, agave, water, gojis, cacao nibs, and fillers. Process in food processor until well combined. Add cacao nibs and gojis, and process again. Add dates and process until crumbly. While running food processor slowly add the agave and the water until a dough-like consistency is formed. Remove from food processor.

Knead dough, and roll out onto a clean surface on wax paper or parchment paper. Spread fillers over top, and roll dough up into a long log. Slice log into small slices. Roll each slice into a ball, and flatten into a disk. I placed these cookies in the dehydrator for several hours, but it’s not necessary. They keep well in the refrigerator either way.

For the ice cream sandwich.
2 cookies per serving
1 cookie-scoop of Coconut Bliss Island Vanilla ice cream per serving
chocolate syrup for drizzling (if desired)
cacao nibs for sprinkles (if desired)

Place 1 cookie-scoop of the ice cream in between the two cookies. Drizzle with chocolate syrup and cacao nibs if desired, or eat plain. To store, place ice cream cookie sandwiches in plastic wrap and freeze. Enjoy!

Butternut Squash-Carrot Burgers with Wesley Gourmet Seasoning

A few weeks ago, and old school friend sent me a bottle of his famous Wesley Gourmet Seasoning. It’s an all natural product with 21 freshly ground spices. Although this product is usually used when preparing cooked meals, Wes was convinced I would find that it could also flavor my raw food dishes. So I decided to give it try – after all it is ALL NATURAL!!!

Well, I decided to use it in a new raw veggie burger I created. The seasoning has such incredible aroma I just knew it would go great with this dish. Because the burger is made of live and raw fresh ingredients, and dehydrated for a short time, I was very generous in the amount of seasoning I used. All I can say is, WOW! These burgers were by far my best recipe yet! The family agreed! I really feel it had a lot to do with the seasoning. Otherwise the burgers would have been good, but somewhat plain. The seasoning definitely gave it the “kick” it needed! It actually gave these burgers “meat burger” appeal…if you know what I mean.

Now for my delicious, flavorful, raw burgers!

Butternut Squash-Carrot Burgers with Wesley Gourmet Seasoning.
1/2 cup whole raw sunflower seeds
1/2 cup ground raw sunflower seeds
1/2 cup ground raw flax seeds
1/2-2/3 cup purified water
1 cup raw pecans
1 1/2 cups carrots chopped
2 cups raw butternut squash cubed
1 1/2 T Wesley Gourmet Seasoning

Process carrots, butternut squash, and pecans in a food processor until smooth . Add ground sunflower seeds and flax seeds. Process some more. Add the water and seasoning. Process until smooth. Add whole sunflower seeds and pulse until well combined. Remove from food processor. Form mixture into hand-size burger shapes. Place on dehydrator trays and dehydrate for 8-10 hours, flipping burgers halfway through the dry time. Dry time will depend on the desired texture of the burger. Serve warm, straight from the dehydrator, or store in refrigerator and eat cold or at room temperature.

To serve my burgers, I used Ani Phyo’s recipe for Black Sesame Sunflower Bread, pg. 153 of Ani Phyo’s book, Ani’s Raw Food Kitchen: Easy, Delectable Living Foods Recipes. I mushed up some fresh avocado to make a plain mayo, and placed the burgers on top of fresh Mache, also called lamb’s lettuce on top of the bread. It was delish!!!

Kardea Gourmet Nutrition Bars

Recently I had the pleasure of receiving products from Kardea Nutrition to sample and blog about. Kardea is one of my first real opportunities to provide a requested product review, and to try something new. I received a package of 4 delicious and nutritious food bars, the Kardea Gourmet Nutrition Bar sampler pack. The four bars consisted of a Cranberry Almond, Banana Nut, Chai Spice, and my favorite the Lemon Ginger bar. All four bars were fantastic!

In addition to the magnificent flavor and consistency of these bars, was the great nutritional value of each bar too. Raw Food Product Reviews

Well, it’s been a while since I posted any recipes, or product reviews for that matter. I’ve been so busy working, and also finishing up my latest book, Raw Food Basics. It’s now available as an e-Book, and soon in paperback. Link here to learn more!

Today’s focus will be on several great raw food products that I enjoy and purchase on occasions. The first item is a wonderful and original raw honey elixir by Raw Matt, who is an MMA fighter, and a raw food enthusiast too. The name of his company and product line is Epic Elixirs. These raw honey elixirs are handcrafted from organic and wild herbs and honey that have been hand-harvested by his company from pristine mountain canyons and source from healthy gardens or sustainable, small farms. These elixirs are so incredibly delicious and magical, I truly felt the difference when I consumed them on a daily basis. I would spread it on crackers, have heaping tablespoons in my smoothies, and eat it by the spoonful too! Great stuff!

This product is Cocopura, a pure coconut  superfood – coconut creme spread. It’s low-glycemic, raw and organic! It’s so delicious! I found myself eating spoonfuls of this stuff! It’s a great treat to spread on raw bread or crackers, to mix in smoothies, or add to raw dessert mixes. This is probably the best coconut creme I have ever tasted!!! Truly! =)

Lately I have been eating a lot of purchased raw food snacks! My schedule has been such that I haven’t had time to make my own. Well, trying to find healthy, less fattening, raw food snacks for purchase can be challenging. They are all delicious, but some are more “fattening” than others. They are the “junk foods” of the raw food world! So, I did my research and came across the company over a year ago. The products are phenomenal, low fat, and super yummy! And now I can find them at the local Whole Foods store, in addition to purchasing them online. Okay, so who is this company? And what do they make? They are Freeland Foods, and they make Goraw – Real Live Food!!! Freeland Foods produces some of the finest hand-crafted, certified organic, raw living food available today.

All their products are created much in the same way. They start with the best seeds found, soaked in filtered water, rinsed and cleaned, then sprouted for up to four hours. The mixture is then spread by hand over trays and loaded into custom built dehydrators where they sit for about two days at an average temperature of 98 degrees. This little item is pretty addicting! I have to watch myself when I have these. I can go through an entire little box within an hour or less. They are that good! This is another item now available at the local Whole Foods store. This product is made with decadent dark chocolate (raw chocolate), that’s covered over super goji berries for super delicious goodness! It’s loaded with protein, nutrients, essential vitamins and trace minerals. A great chocolate snack when you are craving some dark and sweet like super chocolate!!!
