What’s for breakfast?

Recently I made some real yummy dishes that are great to have for breakfast, or a mid-morning snack. Unfortunately the food went faster than my camera could snap a picture, so I have no photos to share. As you can tell by the recipes, I really love, love, love bananas! Each dish I served with bananas. Enjoy!

Raw Granola with Fresh Fruit.
Ingredients:
1 cup raw oat groats or buckwheat (soaked)
1 cup raw flax seeds (soaked)
1/4 cup raw chia seeds (soaked)
1 cup raw sesame seeds (soaked)
1/2 cup raisin, dried berry blend (soaked)
1/2 cup goji berries (soaked)
1/4 cup cacao nibs
1/2 cup vegan carob chips
1/2 cup dried shredded coconut
1 tsp ground cinnamon
1/2 tsp pink Himalayan salt
1 tsp vanilla extract
1/2 cup agave nectar, or Coconut Secrets (I mixed 1/2 and 1/2)
drizzle maple or raw honey
1/4-1/2 cup melted coconut oil
water (about 2 1/2 to 3 cups for soaking)

Preparation:
Combine all ingredients together that need to be soaked. Soak in 2-3 cups of water for at least 4 to 8 hours. (I soaked ingredients overnight). Drain and rinse. Place in food processor pulse a few times to breakup mixture. Add remaining ingredients, except for the coconut oil. Pulse mixture again. Add coconut oil and continue pulsing until a slightly crunchy and mushy texture is formed. Pour onto dehydrator trays and dry overnight (about 8-12 hours depending upon desired dryness). Keep in airtight container. Serve over fruit, ice-cream, yogurt or with your favorite nut milk. I had mine with goats yogurt and fresh cut bananas and blueberries, and I also ate it with delicious nut milk, bananas, and more bananas, and a few drops of SweetLeaf Liquid Stevia.

Chocolate-Chia Porridge served with Fresh Fruit.
Ingredients:
1/2 cup hemp seeds
1 1/2 cups coconut water
1 tsp vanilla extract
1/4 cup Coconut Secrets
1 tsp ground cinnamon
1-2 T raw cacao powder
few drops chocolate flavored SweetLeaf Liquid Stevia
1/2 tsp sea salt
4-5 T raw chia seeds
1 small banana, peeled and sliced thin
1/2 cup blueberries

Preparation:
Combine all ingredients except the chia seeds and fresh fruit. Blend well until a frothy, creamy milk-like consistency is formed. Place chia seeds in a small mixing bowl. Pour milk mixture over chia seeds and whisk well. Place in refrigerator with a lid and let set for about an hour or longer. (I set mine overnight). Add fresh fruit and mix well. It’s ready to serve, and oh so yummy for your tummy!

Fruit Bowl.
Ingredients:
1 medium banana, peeled and sliced
1/2 cup blueberries
1/2 cup strawberries, stemmed and sliced
1 orange sliced into sections and quartered
1/4 cup carob chips
2 T raw cacao nibs
1/4 cup soaked, dried buckwheat crispies
1 T bee pollen
1 T hemp seeds
dash ground cinnamon
drizzle agave or maple syrup

Preparation:
Combine all ingredients in a bowl and toss well. Serve as is, or with your favorite raw yogurt or goat’s yogurt. Yummo!
